Let us further discuss the most common
roasting defects and how could they be prevented:
Under Development
This
is probably one of the easiest ways to detect the fault before the roasting
goes wrong. If you roast the underdeveloped seeds they won’t roast well. They
will already appear pretty light in color or would rather appear partially
green in color. The taste would simply differ from what you were expecting and
it would be no better than eating uncooked food. a lot of coffee roasters
places in Portland give special heed to such cases and avoid using
underdeveloped seeds in the first place.
Over Development
This
situation would mostly occur when you mistakenly roast the coffee beans for too
long. They will appear to be too smoky and will give an oily texture. The taste
of the coffee is also bound to get a bit too bitter and in most cases would
probably be rejected in the first place.
Scorching
This
scenario with the coffee beans is pretty easy to detect. The coffee beans in
the scorching case would appear burnt on at least one side or in some cases
both sides. This is usually the fault of the operator as the temperature
initially was too high and the drum wasn’t rotating at a constant speed.
Tipping
Tipping
is pretty much similar to scorching but there is a difference. The burn marks
in case of tipping would appear on the beans themselves. There is no definite
reason why exactly this happens but it is mostly assumed that the temperature
at the starting remains high.
Baked Coffee Beans
The
case of baked coffee beans is pretty different as it is impossible to see the
defect visually but could rather be experienced while tasting your coffee. The
baked coffee beans are mostly the case when the temperature takes time to rise
and the process of roasting is pretty slow.
